Monday Menu 01.18.10

The fiance and I are on a tight budget until further notice, so we’re stretching out resources as much as possible, and making use of our well-stocked pantry. In fact, my grocery list this week is teeny tiny: bread, cereal, milk, cheddar cheese, salad greens, and stir-fry veggie mix – approximately $25 of stuff from Whole Foods. Last week we spent just over $50 on groceries, so we’re doing well and staying under budget while we’re both on the job hunt!
- Monday: Easy Macaroni & Cheese (made with pepper jack and tuna)
- Tuesday: Vegetable & Italian Sausage Linguine
- Wednesday: Roasted Pork Loin with Roasted Vegetables
- Thursday: Matzoh Ball Soup with Chicken
- Friday: Baked Fish & Chips
- Saturday: Pork Stir-Fry
- Sunday: Spinach Stuffed Shells
